Amazing Grilled Chicken


I found this amazing chicken recipe on pinterest.  It was a pasta recipe, but instead of creating the whole recipe I just wanted the chicken.  It was DELICIOUS!!  I took my chicken breasts out of the freezer at noon, let them sit on my counter* marinating in a Ziploc bag until about 5:30 and then grilled them.  You can also just put them overnight in your fridge.  It was perfect and the flavor was awesome.  Would be great serve on a bun or whole grain roll also.  Double it and serve it to company, or half it and just serve yourself!  It's a great, easy and fast recipe - it's also very low calorie!!!  Serve with fresh grilled veggies for a super healthy supper!!  I usually cut up zucchini or yellow squash to marinate with the chicken and then grill it in a grill basket.

Amazing Grilled Chicken

Ingredients:
5 boneless skinless chicken breasts
6 tablespoons lemon juice (or juice of 2 lemons)
6 tablespoons olive oil
2 tablespoons minced garlic
1/2 teaspoon pepper
1 teaspoon basil

Instructions:
Mix all ingredients (except chicken) in a gallon Ziploc bag, or marinating container.  Add chicken and marinate 4+ hours.  Heat grill to desired temperature and place chickens breasts on grill rack about 4-5 minutes on each side until cooked through.

*There are arguments on how defrosting should be done.  Do what you feel is best for you.
